Mix Coating: In a large, shallow bowl, whisk together all of the seasoned flour ingredients until completely combined.
Bread the Chicken: Lift each piece of chicken from the buttermilk, letting excess drip off.

Press firmly into the seasoned flour mixture until thoroughly coated on all sides. Place on a wire rack and let rest for 10–15 minutes so the coating sticks.

Place in the air fryer basket in a single layer without crowding.
Flip & Spray: Cook at 375°F (190°C) for 25 to 30 minutes, flipping the pieces halfway through.

Spray any remaining white/dry flour spots with oil after flipping to guarantee a golden, crunchy crust.
Check Doneness: Remove once the coating is golden-brown and the internal temperature reaches 165°F (74°C). Rest for 5 minutes before serving.

Tips
Don’t Skimp on Oil Spray: A thorough coating of cooking oil spray replaces deep-frying oil and hydrates any powdery spots so the flour turns shatteringly crisp instead of chalky.

The Power of Cornstarch: Mixing cornstarch with all-purpose flour weakens the gluten structure, producing a lighter, crunchier shell.
