Prepare the Base
- Process cookies in a food processor until they resemble fine crumbs, like sand. You can use any chocolate cookie of your choice—Oreo or chocolate chip cookies work best.
- Mix the crumbs with melted butter until fully combined.
- Pour the mixture into a 20–22 cm (8–9 inch) springform pan and press it down firmly into an even layer using the bottom of a glass or spoon.
- Place the crust in the freezer to firm up for 10–15 minutes while preparing the next layer.
Prepare the Ice Cream Layer
- Let the vanilla ice cream soften at room temperature for about 5 minutes—just enough to make it mixable but not melted.
- Stir in chocolate chips and optional chocolate pieces, mixing gently to distribute evenly.
- Spoon the ice cream mixture over the frozen crust and spread evenly with a spatula.
Add the Chocolate Layer
- Drizzle chocolate sauce or spread a thin layer of ganache over the top of the ice cream layer.
- If desired, use a knife to lightly swirl the sauce or ganache for a decorative effect.
