Ingredients
Filling:
- 1 cup packed dark brown sugar (200g)
- 2 Tbsp ground cinnamon (16g)
- ¼ tsp fine salt (2g)
- ½ cup unsalted butter, softened (113g)
- ⅓ cup cookie butter, melted (66g)
Dough:
- 4¼ cups all-purpose flour (550g), plus up to ½ cup extra as needed
- 2 packets instant dry yeast (4½ tsp / 14g)
- 1 tsp fine salt (6g)
- 1 cup whole milk (240ml)
- ½ cup unsalted butter, room temp (113g)
- ½ cup granulated sugar (100g)
- 2 large eggs, room temp (112g)
Frosting:
- ½ cup unsalted butter, room temp (113g)
- 2 tsp vanilla extract or paste (8ml)
- ¼ tsp fine salt (1g)
- 1½ cups powdered sugar (190g)
- 3 Tbsp heavy cream, room temp (45ml)
- ¼ cup cookie butter, melted (50g)
- ½ cup chopped Biscoff cookies (50g), for topping
