Instructions

1. Bake the pie crust

  • Preheat oven according to pie crust package directions.
  • Bake the crust until golden brown.
  • Let it cool completely before filling.

2. Make the glaze

  • In a medium saucepan, whisk together:
    • sugar
    • cornstarch
    • water
  • Cook over medium heat, stirring constantly, until the mixture thickens and becomes clear.

3. Add the Jell-O

  • Remove the saucepan from heat.
  • Stir in the strawberry Jell-O until fully dissolved.
  • Let the mixture cool for about 10–15 minutes (slightly warm is fine, but not hot).

4. Prepare the strawberries

  • Arrange the halved strawberries in the cooled pie crust.

5. Assemble the pie

  • Pour the glaze evenly over the strawberries.
  • Gently spread so all berries are coated.

6. Chill

  • Refrigerate for at least 3–4 hours, or until set.

Serving

Serve chilled with whipped cream.

Optional additions

  • Add a few blueberries for color.
  • Brush whole strawberries with extra glaze for a glossy bakery look.
  • Use a homemade butter crust for a richer flavor.

Enjoy — this pie is especially good cold on a hot day.
