Ingredients

  • 1 box (18.25 ounces) white cake mix
  • 1 box (3 ounces) strawberry-flavored instant gelatin
  • 1 package (15 ounces) frozen strawberries in syrup, thawed and pureed
  • 4 large eggs
  • ½ cup vegetable oil
  • ¼ cup water
  • ¼ cup butter, softened
  • 1 package (8 ounces) cream cheese, softened
  • ½ teaspoon strawberry extract
  • 7 cups confectioners’ sugar
  • Freshly sliced strawberries for garnish (optional)

Directions

  1. Preheat your oven to 350 degrees F. Lightly grease two 9-inch round cake pans, making sure the bottoms and sides are well coated to prevent sticking and ensure easy release.
  2. In a large bowl, combine the white cake mix and strawberry-flavored gelatin. Stir until evenly blended so the strawberry flavor is distributed throughout the dry mix.
  3. Add the pureed strawberries, eggs, vegetable oil, and water. Beat at medium speed with an electric mixer until smooth and well combined, scraping down the sides of the bowl as needed. The batter should appear thick, smooth, and evenly pink in color.
  4. Pour the batter evenly into the prepared pans, smoothing the tops gently. Bake for 20 minutes, or until a wooden pick inserted into the center of the cakes comes out clean.
  5. Allow the cakes to cool in the pans for 10 minutes. Then carefully remove them from the pans and let them cool completely on wire racks before frosting.
